Extractions, fermentations and astonishingly precise textures drive a cuisine that can feel both cerebral and sensuous, all housed in one of Paris's grandest dining rooms. The contrast is part of the appeal: gilded history outside, restless technical experimentation on the plate. It is unmistakably Parisian, but not in the postcard sense; this is classicism taken apart, concentrated and rebuilt for now.
