Memories, at the Grand Resort Bad Ragaz, takes Alpine nostalgia and makes it clean, modern and surprisingly emotional. Sven Wassmer's cooking draws on Swiss mountains, lakes, herbs, dairy, grains and preserved ingredients, but the restaurant avoids chalet clichés. The name is apt: dishes often feel like recollections sharpened by technique, turning childhood, landscape and regional craft into something poised. It is a luxury resort restaurant, certainly, but the best moments taste more like moss, smoke, snowmelt and memory than hotel polish.
