Reale, set within Niko Romito's Casadonna monastery in Abruzzo, is one of Italy's clearest examples of reduction as drama. Romito's cooking can look stark, even severe, but the simplicity is deceptive: vegetables, breads, broths, meats and pastas are pared back until flavor feels almost structural. The restaurant is not trying to charm with rusticity or regional clichés. Its power comes from concentration, from the sense that every garnish removed has made the remaining ingredient louder.
