Mingles helped define contemporary Korean fine dining by treating tradition as material for invention rather than a script to be followed. Mingoo Kang's cooking folds jang, kimchi, seasonal vegetables, seafood and Korean ritual into a sleek tasting-menu format that still feels connected to Seoul's appetite and speed. The name hints at mixture, and that is the point: old and new, local and global, restraint and generosity. It is polished, but the fermentation and flavor depth keep it from floating away.
