Maaemo, whose name evokes Mother Earth, gives Oslo a Nordic restaurant of striking purity. Esben Holmboe Bang's cooking is built from Norwegian landscapes: seafood, lamb, grains, berries, dairy, herbs and preserved flavors shaped by cold, darkness and short seasons. The room is sleek, but the food's emotional force comes from contrast: fragility against intensity, smoke against sweetness, austerity against generosity. It can feel almost elemental, as if the meal were trying to make weather edible.
