HAJIME is fine dining as cosmology. Hajime Yoneda, trained in engineering before cooking, builds plates that often feel less like dishes than diagrams of the living world: water, earth, biodiversity, memory and technology all compressed into edible form. The Osaka restaurant is rigorous and highly personal, but its ambition is not simply technical display. The best moments have a strange tenderness, suggesting that precision and wonder are not opposites. It is one of Japan's most unusual arguments for what a restaurant can contemplate.
