Hideaki Sato's plates are often quiet at first glance, but they build through purity, texture and seasonality rather than obvious luxury. The restaurant feels intimate and inward-looking, more interested in coherence than spectacle. Hong Kong gives it access to a wide culinary world, yet the meal's strongest impression is restraint: ingredients treated with care until their edges become almost luminous.
