Osteria Francescana is Massimo Bottura's love letter to Emilia-Romagna, written in jokes, memories and very serious technique. The restaurant's small Modena dining room is famous precisely because the food refuses to treat tradition as a museum object. Tortellini, Parmigiano Reggiano, balsamic vinegar, ragù and childhood references are stretched, inverted and sometimes teased, but the affection is never in doubt. It is intellectual cooking with a beating heart, where the punchline usually tastes better than the setup.
